Quick, Easy & Healthy Meals

This class will cover techniques that allow you to get a meal on the table in less than an hour, sometimes less than half an hour, and focus on using ingredients that you may already have. We will cover several techniques that allow you to speed up your meal prep. We will be making three recipes, one of which will be vegan. Assistance in the prep will be welcome but not required. We will be eating the food prepared as we go along. Questions are welcome throughout the class.
The menu will be using tomatoes on hand to make a quick red sauce for store bought stuffed pasta, pintxos (a Spanish tapas dish) that uses boldly seasoned pork tenderloin or boneless chicken thighs, and mujadarra (a Middle Eastern seasoned lentil and rice dish with crispy shallots).
I am a home cook, largely self taught but I have experience cooking in restaurants and kitchens that serve populations in need. I enjoy cooking many different types of food and have taught a class on Korean bbq for the Co-op several years ago. I used to work in the medical device industry and have traveled North America, Europe and South Korea (once!)
