Incorporating High Fiber Foods Into Your Regular Routine

You may have heard that it’s important to eat enough fiber, yet many Americans eat far less than the recommended amount. Current studies show that many Americans eat half (or less) of the recommended dietary fiber. A diet that is high in fiber can help lower your LDL cholesterol, help control blood sugar, reduce your risk of heart disease and colon cancer, and lead to better digestive and gut health. Come join Erin and Jim for an evening of simple additions to your diet that are delicious and will substantially increase your daily fiber intake.  

Co-op Staff member Erin has been mostly vegetarian for almost 40 years. She has worked in the Co-op’s produce department for 20 years and learned to cook largely from trying to incorporate various types of produce into the meals she makes. Erin loves to experiment with with food and especially enjoys finding recipes that can be used in multiple ways throughout the week for easy lunches and dinners.

Co-op Board member Jim has been a vegetarian for 40 years and has been involved with food co-op’s for the majority of his adult life. With an early interest in cooking, Jim has made a point of learning and experimenting with a wide variety of styles and techniques of vegetarian and vegan cooking. Jim has also lived abroad in several different countries and had the opportunity to experience a number of cuisines first hand. He is also always interested in finding efficiencies in cooking, to make recipes more accessible to busy people.

In this time of increasing costs, we have decided to move to a  pay what you can model so that no one is left out due to lack of funds. Our class supply costs are also increasing, so we ask you to make a donation according to your ability and help us keep our classes sustainable and vibrant. Suggested donations are from $5-$50.

About Our Classes

Our Co-op Community Classes program has a long and exciting history; we've had a plethora of learning partners over the years, the Free School, GRUB, the Fertile Ground, and more. Many of our classes focus on basic kitchen skills, often paired with a solid education in a particular kind of food: hearty greens, fermented foods, international delicacies, pies, etc. We also feature classes on gardening, personal health, sustainable living, and social justice. Classes are geared towards beginners, with no assumption of prior knowledge, often packed with specific projects appealing to those with more experience.

At the heart of all of our programming is the spirit of generosity. Our classes are led by Olympia Food Co-op working members, staff and community members who want to share their excitement and knowledge with you.  Consider sharing your expertise with your community through a Co-op Community Class.  Our classrooms are a place to experiment, to explore, and to try something new in a supportive environment. They are a great place to network and meet others in your community who share your interests.
