Satisfying Plant-Based Lunches

Are you bored with your lunch repertoire? Do you want to be envied by your coworkers for having the tastiest lunches? If so, please join us for a hands-on cooking class where we will prepare nutritious, quick, affordable, and satisfying plant-based lunches with minimal food waste. We will make an entree salad (Budda bowl), soup (butternut squash or tomato orzo), and sandwich (chickpea salad) — enough variety for at least a week’s worth of lunches/lunch combinations. Recipes will be provided, including alternative ingredients for vegans.
Laurie Weidner enjoys taking and teaching cooking classes at the Co-op. Her family is convinced that one of her superpowers is making mealtime masterpieces from whatever ingredients are on hand in the kitchen. She enjoys elevating the brown bag lunch experience with tasty nutritious recipes.
In this time of increasing costs, we have decided to move to a pay what you can model so that no one is left out due to lack of funds. Our class supply costs are also increasing, so we ask you to make a donation according to your ability and help us keep our classes sustainable and vibrant. Suggested donations are from $5-$50.

About Our Classes
Our Co-op Community Classes program has a long and exciting history; we've had a plethora of learning partners over the years, the Free School, GRUB, the Fertile Ground, and more. Many of our classes focus on basic kitchen skills, often paired with a solid education in a particular kind of food: hearty greens, fermented foods, international delicacies, pies, etc. We also feature classes on gardening, personal health, sustainable living, and social justice. Classes are geared towards beginners, with no assumption of prior knowledge, often packed with specific projects appealing to those with more experience.
At the heart of all of our programming is the spirit of generosity. Our classes are led by Olympia Food Co-op working members, staff and community members who want to share their excitement and knowledge with you. Consider sharing your expertise with your community through a Co-op Community Class. Our classrooms are a place to experiment, to explore, and to try something new in a supportive environment. They are a great place to network and meet others in your community who share your interests.
